300g of carrots
150g of xylitol or sugar
260g of oat flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1.5 teaspoon of cinnamon
0.5 teaspoon of nutmeg
5 large eggs
handful of sultanas or other dried fruits
For glazing and topping:
410g of curd cheese
1 tablespoon of natural yoghurt
3 teaspoons of xylitol/sugar
Set the oven on 180 degrees and put baking paper into a round cake tray.
Mix eggs, xylitol and oil together.
Peel the carrots and grate them.
Mix the dry ingredients in a separate bowl.
Add the grated carrots into the egg mixture and stir it together. Then slowly keep on adding dry ingredients while stirring.
Add dried fruits and stir them in.
Pour the mixture into the baking tray and bake it for 45 minutes in 180 degrees.
When the cake cools down, mix the glazing ingredients (apart from nuts) and spread the glazing on top of the cake.
Add chopped walnuts on top.
