Coconut protein omlette with raspberries

  • 2 eggs

  • 7g of coconut flour (flat tablespoon)

  • scoop of protein powder

  • half a teaspoon of baking soda

  • cinnamon

  • raspberries

  • favourite toppings


  1. Mix the dry ingredients together: flour, cinnamon, baking soda and protein powder.

  2. Spread some coconut oil on a small frying pan, using a paper towel.

  3. Beat whole eggs until fairly stiff. Preheat the frying pan on a small heat in the meantime.

  4. Add dry ingredients to eggs and mix it carefully.

  5. Pour everything on the pan and stick some raspberries into the omlette, then cover the pan and fry the omlette on a small heat.

  6. When the top of the omlette foams a bit and the bottom is cooked, flip the omlette and fry it on the other side for a moment.

  7. Then put in on a plate and add your favourite toppings.
