    Delicious gluten-free coconut cookies 🥥

    Ingredients (for approx. 13 cookies)

    • 1/2 cup of coconut flour

    • 1/3 cup of cashew nuts

    • 2 large eggs

    • 1/4 cup of melted coconut oil

    • 1/4 cup of xylitol

    • 1 teaspoon of baking soda

    Instructions:

    1. Set the oven on 180 degrees.

    2. Mix the dry ingredients together.

    3. Add coconut oil and eggs to the dry ingredients and mix everything together.

    4. Wait for a moment for the coconut flour to absorb the liquid. If the consistency isn't still thick enough to form cookies, add a bit more of the coconut flour.

    5. Chop the cashew nuts and add them to the dough, then mix it all together.

    6. Form cookies on a baking tray with a bakery paper spread on it.

    7. Bake them for around 10-15 minutes in 180 degrees until they turn gold.
