Ingredients (for approx. 13 cookies)
1/2 cup of coconut flour
1/3 cup of cashew nuts
2 large eggs
1/4 cup of melted coconut oil
1/4 cup of xylitol
1 teaspoon of baking soda
Set the oven on 180 degrees.
Mix the dry ingredients together.
Add coconut oil and eggs to the dry ingredients and mix everything together.
Wait for a moment for the coconut flour to absorb the liquid. If the consistency isn't still thick enough to form cookies, add a bit more of the coconut flour.
Chop the cashew nuts and add them to the dough, then mix it all together.
Form cookies on a baking tray with a bakery paper spread on it.
Bake them for around 10-15 minutes in 180 degrees until they turn gold.
