    Vegan lentil dahl 🧡

    Ingredients (4 portions):

    • 1 cup of red lentils

    • 1 can of coconut milk

    • 1 can of tomatoes

    • 3 tablespoons of curry spice

    • salt

    • 1 cup of water

    • onion

    • olive/rapeseed/coconut oil


    1. Dice the onion and fry it on the oil, in a saucepan. Stir it from time to time.

    2. When the onion is soft, add dry lentils, tomatoes, water, salt and curry. Let everything cook and stir it once in a while.

    3. When the lentils absorb most of the liquid, add coconut milk, stir it in and cook until you get a thick consistency.

    4. Serve it either with rice or naan bread! Also, roasted cashew nuts go really well with it!
