Ingredients (4 portions):
1 cup of red lentils
1 can of coconut milk
1 can of tomatoes
3 tablespoons of curry spice
1 cup of water
Dice the onion and fry it on the oil, in a saucepan. Stir it from time to time.
When the onion is soft, add dry lentils, tomatoes, water, salt and curry. Let everything cook and stir it once in a while.
When the lentils absorb most of the liquid, add coconut milk, stir it in and cook until you get a thick consistency.
Serve it either with rice or naan bread! Also, roasted cashew nuts go really well with it!
